Serving Liqueurs
Quality standard
Liqueurs are served in a cordial glass with a high ball glass of ice water. All liqueurs on the rocks are served in an Old fashioned glass.
Procedures
On the rocks
1. Read the Captain’s Order to know the type of liqueur, brand and service specified by the guest.
2. Get an Old fashioned glass and high ball glass. Check for cleanliness and condition.
3. Fill in the glass with ice until ¾ full.
4. Get the bottle of liqueur ordered by the guest.
5. Use a jigger to measure 3 Cl of the liqueur, 1 large side.
6. Pour into the Old fashioned glass with ice.
7. Pour water into the highball glass with ice.
8. Set a stirrer into the Old fashioned glass.
9. Set the Old-fashioned glass and high ball glass on the pick up counter.
Straight
1. Read the Captain’s Order to know the type of liqueur, brand and service specified by the guest.
2. Get an Old fashioned glass and high ball glass. Check for cleanliness and condition.
3. Fill the high ball with ice.
4. Get the bottle of liqueur ordered by the guest.
5. Use the jigger to measure 3 Cl of liqueur, 1 large side
6. Pour liqueur into the cordial glass.
7. Pour water into the highball glass with ice.
8. Set the cordial glass and Hi-ball glass of iced water on the pick up area on the counter.
