Procedures


1. Never scoop ice with the glass you are going to use.
2. Always use an ice scoop or a shaker, never a glass object.
3. Patrons may think, correctly or not, that you are filling unclean glass directly from the ice bin.
4. This impression comes from the fact that patrons often prefer their glasses to be refilled using the clod ice rather than receiving their next drink in clean, empty glasses.
5. If glass contaminated the ice. Empty all the ice from the bin.
6. Clean the bin with hot water and a rag and refilled the bin with ice

NOTE : This is a very time-consuming procedure, so get in the habit of using a scoop.
